This keeps them from shorting out on each other and prevents frictional heating, which results in less energy being stored in your battery. It's very important to make sure that there is no contact between the plates and rods when you insulate, otherwise they will become hot and oxidize. By the way, we used cardboard for our insulation in this lesson. It's cheap and easy to find (you can always recycle old boxes or something like that), and it does a pretty good job keeping things insulated.
